Honey Bourbon Fruit Pizza with Bourbon Balsamic Glaze

Happy Easter Everyone! 

If you are anything like me, you have enjoyed brunch, mimosas, chocolate, and an afternoon nap. Now you're up, and looking for something sweet, light, and delicious--but don't want to spoil your appetite for dinner, and are momentarily not speaking to your Easter basket.

Behold, the Honey Bourbon Fruit Pizza. A light, sugar-cookie base, frosted with Honey Bourbon Marshmallow cream cheese, and topped with fresh, sliced fruit. We chose to serve it with a honey bourbon balsamic glaze, but it is also great on it's own -- and oh Bunny was it a hit!

Honey Bourbon Fruit Pizza with Bourbon Balsamic Glaze

For the Pizza, You Will Need:
  • 1 (17.5 oz) sugar cookie pouch mix OR your favorite from-scratch recipe
    • 1/2 cup of butter, at room temperature
    • 1 egg
  • 1 (8 oz) Brick of cream cheese, softened
  • 2 Boxes of Honey Bourbon XO Marshmallows
  • 1 Teaspoon honey
  • 2-3 Cups of fresh fruit (we used Raspberries, Strawberries, Blueberries, Banana, and Blackberries, but feel free to use whatever is in season)

For the Balsamic Glaze, You Will Need:
  • 2/3 Cup balsamic vinegar
  • 1/2 Cup Honey Bourbon
  • Salt
Instructions
  1. Preheat the Oven to 350 degrees. Lightly spray a cookie sheet (we used Wilton's Peep Cookie Pan) and set aside.
  2. Prepare the Sugar Cookie dough according to the directions, making sure to mix in the butter and the egg.
  3. Press the prepared cookie dough into the cookie sheet, We found that using our hands coated in a touch of butter spray worked well for this task.
  4. Bake at 350 for approximately 11-13 minutes, until the cookie is lightly browned. Cool completely.
  5. In the meantime, melt the marshmallows and honey in a microwave safe bowl for approximately 30 seconds, and stir until fully blended. Add the cream cheese and mix until smooth.
  6. Spread the marshmallow frosting onto the cooled cookie. Add assorted fruit in rows, or however you please

To make the Honey Bourbon Glaze:
  1. Combine the balsamic vinegar and honey bourbon in a small pan. Bring to a rapid boil--Be Careful! Bourbon is flammable! -- then immediately lower temperature to a simmer.
  2. Simmer for approximately 15 minutes, stirring occasionally, until mixture has reduced by half.
  3. Remove from heat, serve warm, drizzles atop pizza.
